Is there any tool to strip metadata from documents?

How can I strip metadata from PDF, doc or jpg files? Is there any application available? I don't see the option in Libreoffice.

There is pdf2txt and other CLI tools. Also, abiword can strip some file formats -even from CLI.

I think modifying a jpeg, as for instance by resizing it with mtPaint, removes the metadata. I could be wrong, or maybe it depends on the editing program used.

Yes, it depends on the program. mtPaint does not ever preserve any metadata (nor write any of its own), even if file is just re-saved unmodified. While GIMP does preserve them (reads in, and by default writes out - but can be told not to in the "Advanced options" of its JPEG save filter).
