Tested in newyearspup, wine 1.1.19.
I used a new /root/.wine
Hint: do a backup of it, once it works.
When I ran the Safari installer a second time, it did no longer work, there was something broken with the msvcr80.dll manifest.
So create a new /root/.wine
Install the MS core fonts and Flash:
winetricks corefonts flash
I did not install Flash, and copied the corefonts from the Google Chromium SFS to /root/.wine/drive_c/windows/Fonts/.
Then extract iphlpapi.dll.tar.gz in /root/.wine/drive_c/windows/system32/.
Now run
winecfg
and deactivate hardware accelleration for the graficscard. On my system this fixed, that switching tabs crashes Safari.
And set the Windows version to Windows XP.
And add to the libraries: iphlpapi.dll (native,builtin)
Use the installer:
http://www.apple.com/safari/download/
uncheck the other 2 tools (b..whatever - forgot the name , update).
Then run
wine "c:\\program files\\Safari\\Safari.exe"
(german system: wine "c:\\Programme\\Safari\\Safari.exe")
Then click on the cog to get the options, set the font antialiasing to medium.
Finally you might install a different Windows Theme in winecfg, to get nicer scrollbars.
The result is not perfect.
Tabs show no text, and https:// does not work.
I vaguely remember, that older betas used settings from the internet explorer. Maybe installing the internet explorer with
winetricks ie6
fixes this, but I'm too tired to try it now.
At least it should be ok for webdesigners to test their pages in Safari.

Thanks for describing it. I guess too complicated for me but others could make use of it. They have Safari 5 now so not sure what may have changed since the older Safari 4
