how to make new apps as default?

hi all,

i've been looking at the forums for any threads regarding my problem,
i wasn't able to find any (i know its here, just cant find the thread)

i would like to remove some of the built-in programs (including some default applications) and replace it with my choice of applications.

As far as I know, go to /usr/local/bin and open the "defaultwhatever" with a text editor and change it to what you want.
