Is this a different pen drive than the one you have working? Or did you resize it and add the ext4 partition?

I would make the fat32 partition much bigger (at least 2GB). Reformat it to get a clean partition and start over.

I just tested this in xubuntu and it worked correctly.

Are you opening the terminal in the location where the file bootlace.com exists?

Use the "ls" command to check.

I made up an empty ext4 partition and Gparted reported that it was 3% used.

So your 7/386 GB is probably OK. It looks to me like sda7 is empty.

I have no idea where the data went.

Was sda7 mounted when you did the copy?

If you copied files into the UNmounted folder /mnt/sda7, they would actually go into your own filesystem and eventually fill up your savefile.

Legacy GRUB Config 2019 updated here. The squashfs module has been slimmed down considerably.

This continues to be the most versatile GRUB bootloader app for pre-UEFI machines. Use it with the stetch-live-frugal-install tool.

The Starter Kits are built with a stripped-down version of Fred's mklive script. I remove some of the apps that Fred puts into his Dogs and add some of my own.

To get multi-user, you need a login manager like slim. For details, ask in one of Fred's threads.
